I am trying to find out the benefits of increasing population size on your planets. Can anyone please explain to me what it affects?

Population gives a a small additive** point increase to your defenses. Since population gives a bonus to defense it also helps thwart invasion attempts.

Population also increases the number of attacks that must be made against a planet before a player has a chance to invade it, because the player must get you to 20 or less population in order to attack you.

• • Additive meaning a set amount is give for every X population, as opposed to your legion bonus, which is multiplicative, so the legion bonus adds a 'percentage' to the defenses you already have, while the population bonus will add defense even if you have no defensive structures, and your legion bonus will then multiply it.)
