My stats are probably bad but any constructive criticism would be appreciated

I would suggest getting more arti production and stop colonizing mining planets. Personaly I would research up to +10 structures and more scanning tech since the better planet production you get the faster your ships stats improve. But more hull and weapon tech is a good idea as well
