Depends on your rank and how much you're willing to spend. 2k is a ton of energy to spend for a disable if you are rank 700. It's a lot, but not out of the question at rank 1.4k. Is it par for the course at rank 2.1k? IDK, but I imagine it's not a huge deal

I check medals and probe virtually every ship before I attack it for the first time; it's super easy if they have less than 4,400 decks, because of medals. Beyond that, it's a bit more work, but still fairly easy to approximate the damage cap of a ship by its defense vs. the average of your first 10 hits (throw out obvious crits). You won't be exact with this method, but you will be close.
(your PVP attack / (their PVP under attack defense * 5)) * x = your average damage
